Some delicious LCHF food I have eaten over the last few days.

Spicy Italian sausages with caprese salad & asparagus


Scrambled eggs with pesto & haloumi


Last night we went out to a German restaurant for a family celebration & I had no idea if there would be any low carb options. Decided on kransky with sauerkraut and veggies. Avoided the carrots & I was fine!

Yesterday was weigh in day, and I am pleased to report another 2.1kgs lost! So happy and motivated to keep on losing.

My first attempt at a dessert was a great success. Delicious low carb, low sugar cheesecake brownies & so easy to make.


Brownie mixture
1 cup almond meal
5 tablespoons of cocoa
5-6 teaspoons of powdered Stevia
1 teaspoon of vanilla
1/2 cup of sour cream
2 eggs
125 grams of butter, melted & cooled

Combine all ingredients well.

Cheesecake mixture
250 grams cream cheese, softened
1 egg
1 teaspoon of vanilla
3 teaspoons of powdered stevia

Combine all ingredients & beat well until smooth

Pour brownie mixture into lined baking tin & spread out. I used a square cake tin.
Dollop the cheesecake mixture on top & swirl the mixtures together with a knife.
Bake in a 180 degree oven for 30- 35 minutes.

I divided this into eight portions and worked out it was approximately 4.6g of net carbs per serve. Yummy with double cream!!

Monday, Monday

My new favourite breakfast – one egg & some bacon fried in some butter, topped with some grated cheese & sour cream – yum!



Dinner tonight was really delicious. Sautéed some cauliflower with speck & Basa fillets pan-fried in butter, lemon juice and fresh herbs from my garden with Asparagus.


The story so far…

I started following the LCHF diet about 4 weeks ago, after learning about it on the Diet Doctor. I watched a truly inspiring talk that Dr Andreas Eenfeldt gave & was truly inspired!

After the first 3 weeks I was happy with what I had accomplished in reducing my carbohydrates. Given that I had already cut out most sugar thanks to David Gillespie & Sarah Wilson, the change was less confronting. But I was still a bit disappointed with my weight loss over the 3 weeks, and I was also hoping for more appetite control.

So, I did some further research online & realised I wasn’t eating as low carb as what I thought! This last week I have really reduced my carbs & tried to increase my fat. I have found using the My Fitness Pal app useful for tracking my carbohydrate, fat & protein intake. This last week I have been aiming for under 20 grams of net carbs (carbohydrate grams less fibre grams), and over 70% fat intake.

I am very pleased to report that I have noticed a significant decrease in my appetite & I am really trying to follow my hunger, rather than traditional meal times. It is difficult to change life long habits, but I am working on it a day at a time.

Also very pleased to report that I lost 2.3kgs in the last week!! Loved weighing myself on my new Fitbit scales too.
